Christmas Pudding Recipe


Ingredients:
1.1/2 pound Raisins (Kishmish)
2.1/2 pound chopped Dates (Khajoor)
3.2 tblsp blanched, slivered almonds
4.2 cups chopped Suet
5.1 1/4 cups Fine Wheat Flour (Maida)
6.1 tsp Salt
7.1/4 tsp ground Cloves (Lavang)
8.1/2 tsp Allspice
9.1/2 tsp Cinnamon (Tuj/Dalchini)
10.1/2 tsp grated Nutmeg Powder(Jaiphal)
11.1/2 cup Brown Sugar
12.1 peeled and grated Apple
13.6 eggs
14.1 Orange Juice
15.1 Lemon Juice
16.1/2 cup Buttermilk
17.3 cups fresh White Bread Crumbs
18.1/2 cup Brandy
19.1 pound Sultanas
20.1 pound Currants


How to make Christmas pudding:

1.Grease 1 pudding tin.
2.In a large bowl add dried fruits, almonds and suet .
3.Dredge with 1/4 cup of flour.
4.Lightly sift the remaining flour and spices.
5.Add it to a mixture with sugar and grated apple and mix well.
6.Beat eggs until light and frothy.
7.Add citrus juices, buttermilk and mix it to the pudding mixture.
8.Alos mix in bread crumbs.
9.Now fill the moulds 3/4 to with this mixture and boil for 6 hours.
10.Keep refilling the water while puddings are boiling.
11.When fully boiled let them cool off.
12.Cover them and store them in a refrigerator.
13.Before serving steam again for 1 hour and serve with sauce.
