Chef Ashish helps us in making one with his instant special - Roti Quesadilla recipe. It’s instant, tasty and most importantly a healthy and filling snack to fill our tummies with.

Quesadillas belong to colonial Mexico. People around the world today cook their own special versions of Quesadillas. Authentic Quesadillas can be savoured at Mexican restaurants. In the central and southern regions of Mexico, a Quesadilla is a flat roti-like circle of cooked corn masa called a tortilla, which is further warmed, folded into half and then filled. The filling is typically done using Oaxaca cheese – a stringy Mexican cheese. The quesadilla is then cooked until the cheese is completely melted. These quesadillas are cooked without oil and served with green or red salsa, chopped onion and guacamole. However, Oaxaca cheese is the most common filling, but sometimes other ingredients are also used to fill the quesadilla which includes cooked veggies such as mushrooms and cooked meat. 
 
Recipe: Roti Quesadilla
 
Ingredients:
 
Bell Pepper (Red) 
Onions
Zucchini
Spring Onions
Tomatoes
Coriander
Green Chillies 
Mozzarella Cheese
Hung Curd
Olive Oil
Jeera Powder
Rotis
 
 

 
 

Steps to make Roti Quesadilla:
 
1. Warm the roti, first
2. Grill sliced bell pepper, onions, zucchini and tomatoes  
3. Chop spring onions, coriander & green chillies
4. Flatten the roti in a plate and sprinkle jeera powder
5. Grill it for 1 minute 
6. Top it with grilled veggies 
7. Sprinkle grated mozzarella cheese 
8. Fold the roti & grill it further 
9. Serve it with hung curd and salsa
 
Mouth-watering and healthy – Roti Quesadilla is ready to serve!
